Cook Lentils

First, cook the lentils according to package instructions until tender but still holding their shape. This usually takes 20-25 minutes. Drain and set aside to cool.

Prepare Base

Make the flax egg: combine ground flaxseed with water and let it sit for 5 minutes until it forms a gel. Meanwhile, finely chop the onion, garlic, carrot, and celery stalk. Heat a little olive oil in a pan over medium heat, then sauté the onion and vegetables for about 5-7 minutes until softened.

Combine & Form

In a large bowl, combine the cooked lentils, sautéed vegetables, flax egg, breadcrumbs, chopped parsley, and all the spices (cumin, coriander, smoked paprika, salt, pepper). Mash a portion of the lentils with a fork or potato masher to help the mixture bind together. Form the mixture into about 8-10 patties.

Fry Patties

Heat 1-2 tablespoons of olive oil in a pan over medium heat. Fry the patties in batches for 3-4 minutes per side, until golden brown and crispy. Serve immediately!

Extra Tips

If you prefer, you can bake the patties: bake at 180°C (fan-assisted) for 20-25 minutes, flipping halfway through.

Experiment with spices! A pinch of chili flakes or curry powder also works wonderfully.

Serve with a fresh salad, a yogurt-based (or vegan yogurt-based) dip, or hummus.
