Heat 1 tbsp of olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and chopped jalapeño, and cook for another 1 minute. Pour in the diced tomatoes, ground cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10-12 minutes until the sauce thickens. Stir in half of the chopped cilantro and the lime juice.

Cook Tortillas & Eggs

In a separate pan, heat 1 tbsp of olive oil over medium heat. Fry the corn tortillas one by one, for 30-60 seconds on each side, until lightly browned and pliable. Set them aside. In the same pan, fry the eggs to your liking (e.g., sunny-side up) until the whites are set and the yolks are still runny, about 2-3 minutes.

Place 2 tortillas on each plate. Spoon the spicy tomato sauce over them, then top each with 2 fried eggs. Garnish with the remaining fresh cilantro. You can also serve with avocado, feta cheese, or sour cream if desired.

Extra Tips

For the sauce, you can also use fresh tomatoes; just peel and dice them.

If you prefer a creamier texture, add a dollop of sour cream or Greek yogurt next to the eggs before serving.

You can also warm the tortillas in a dry pan if you prefer not to fry them in oil.
