Prep and Season

Preheat your oven to 200°C (180°C for fan-assisted ovens). Peel the sweet potatoes, then cut them into uniform 2-3 cm (about 1 inch) cubes. In a large bowl, toss the sweet potato cubes with olive oil, garlic powder, smoked paprika, cayenne pepper (if using), salt, and freshly ground black pepper until every piece is evenly coated.

Roast

Spread the sweet potato bites in a single layer on a baking sheet lined with parchment paper, making sure they are not overcrowded, otherwise, they will steam instead of crisping up. Roast for 20-25 minutes, flipping them halfway through, until they are golden brown, tender, and slightly crispy at the edges.

Remove from the oven and serve immediately. They are excellent as a side dish, but also delicious on their own, perhaps with a light dipping sauce.

Extra Tips

For even crispier bites, sprinkle a little cornstarch over the sweet potatoes before roasting.
