Press excess water from the tofu using paper towels, then cut into 2 cm cubes. Cut the eggplants into similar-sized cubes. In a small bowl, whisk together soy sauce, sesame oil, grated ginger, minced garlic, rice vinegar, brown sugar, and chili flakes (if using). In another small bowl, mix cornstarch with water to form a smooth slurry, then add it to the sauce mixture.

Cook Eggplant

Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the eggplant cubes and stir-fry for 5-7 minutes until softened and lightly browned. Remove from the skillet and set aside.

Cook Tofu

Add another 2 tbsp of vegetable oil to the skillet. Add the tofu cubes and stir-fry for 8-10 minutes, turning frequently, until golden brown and crispy on all sides. Then, return the cooked eggplant to the skillet with the tofu.

Pour the prepared sauce mixture over the tofu and eggplant. Cook, stirring constantly, for 2-3 minutes until the sauce thickens and coats all the ingredients. Remove from heat.
