In a large oven-safe skillet, heat 2 tbsp of olive oil over medium-high heat. Sear the rabbit legs on all sides until golden brown, about 3-4 minutes per side.

Roast & Sauce Base

Transfer the skillet with the seared rabbit legs to the preheated oven and roast for 40-50 minutes, or until fully cooked and tender. While the rabbit roasts, finely chop the shallots and garlic. Remove the rabbit from the oven, set aside to keep warm, and cover with foil. In the same skillet (add a little more olive oil if needed), sauté the chopped shallots and garlic until translucent, about 3-4 minutes.

Make the Sauce

Deglaze the skillet with the white wine, scraping up any browned bits from the bottom. Bring to a boil and reduce by half. Add the chicken broth and Dijon mustard, then bring to a boil again. Reduce the heat, stir in the heavy cream, and let it gently thicken for about 5-7 minutes. Finally, stir in the butter until melted and the sauce is glossy. Taste and adjust seasoning with salt and pepper if needed.

Cook Gnocchi & Serve

Meanwhile, bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions, usually 2-3 minutes, until they float to the surface. Drain well. Serve the roasted rabbit legs with the creamy mustard sauce and freshly cooked gnocchi. Garnish with fresh parsley.
