Preheat your oven to 175°C (350°F). Grease and flour two 20 cm (8-inch) round cake pans, or line their bottoms with parchment paper.

In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well to ensure no lumps remain.

In another bowl, lightly beat the eggs, then add the milk, vegetable oil, and vanilla extract. Whisk until smooth.

Combine & Bake

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix! Gently stir in the hot coffee (or water) until smooth. The batter will be thin, which is normal. Divide the batter evenly between the two prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pans for 10 minutes, then invert onto a wire rack to cool completely.

Make Frosting

While the cake layers cool, prepare the frosting. In a large bowl, beat the softened butter until light and fluffy (about 3-5 minutes). Gradually add the powdered sugar and cocoa powder, alternating with the milk and vanilla extract. Beat until you have a light and airy frosting.

Assemble & Decorate

Once the cake layers are completely cool, place one layer on a serving plate and spread a generous amount of frosting over it. Top with the second cake layer. Frost the top and sides of the cake with the remaining frosting. You can decorate with grated chocolate or a dusting of cocoa powder.

Extra Tips

Coffee enhances the chocolate flavor, but if you don't like it, you can substitute it with hot water.

Don't overbake the cake, as it will become dry; a toothpick inserted into the center should come out clean.

Ensure the butter for the frosting is at room temperature, so it creams easily.
