ingredients
Steps
Preparation
Start with the quail eggs: boil them in simmering water for 2-3 minutes, then immediately cool them in ice water. Peel and halve them. Cut the salmon fillet into small, approximately 0.5 cm (0.2 inch) cubes. Dice the avocado and finely chop the red onion. Drain the capers and finely chop the fresh dill.
Mixing
In a medium bowl, gently combine the diced salmon, avocado, finely chopped red onion, drained capers, and chopped dill. Add the freshly squeezed lemon juice and extra virgin olive oil. Season with salt and freshly ground black pepper to taste. Taste and adjust seasonings if necessary.
Serving
Form the salmon tartare onto plates using a ring mold, or simply mound it. Place 2-3 halved quail eggs on top of each serving. Serve immediately, perhaps with toast or a fresh salad.
Extra Tips
► Always use a very sharp knife to cut the salmon to get nice, even cubes.
► Boil the quail eggs for exactly 2-3 minutes so their yolks remain creamy.
► Chill the tartare for at least 15 minutes before serving to allow the flavors to meld.
