ingredients
Steps
Prepare the Beef
Wrap the beef tenderloin in plastic wrap and place it in the freezer for 30-60 minutes until it's slightly firm but not completely frozen. This will make it much easier to slice thinly.
Slice and Arrange
Remove the beef from the freezer and, using a very sharp knife or a meat slicer, cut it into paper-thin slices. Arrange the slices in a single layer, slightly overlapping, on individual serving plates.
Season and Serve
Drizzle the beef with extra virgin olive oil and freshly squeezed lemon juice. Season with salt and freshly ground black pepper. Evenly scatter the drained capers and fresh arugula over the beef. Finally, shave or grate generous amounts of Parmesan cheese on top. Serve immediately.
Extra Tips
► For perfectly thin slices, partially freeze the beef tenderloin for 30-60 minutes before slicing, it will be much easier to handle.
► Use a very sharp knife or a meat slicer to achieve paper-thin slices.
► Prepare and serve immediately before eating to ensure the beef remains fresh and the arugula doesn't wilt.
