Prepare Potatoes
Peel the potatoes and slice them into 0.5 cm (0.2 inch) thick rounds. Place them in a large pot, cover with cold water, add salt, and bring to a boil. Cook for 5-7 minutes until just tender but still holding their shape. Drain and set aside.
Sauté Bacon and Onion
In a large skillet over medium heat, melt the butter. Add the bacon lardons and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the rendered fat in the pan. Add the chopped onion and minced garlic to the skillet and sauté until translucent, about 5 minutes.
Assemble and Bake
Pour the white wine into the skillet with the onions and bring to a simmer, scraping up any browned bits from the bottom. Add the heavy cream, season with salt and pepper to taste, and bring to a gentle boil. In a large baking dish, spread half of the cooked potato slices, then sprinkle with half of the sautéed bacon and onion mixture. Repeat with the remaining potatoes and bacon mixture.
