Steps
Preparation
Prepare your ingredients: thinly slice the beef sirloin and marinate it with 1 tbsp soy sauce, 1 tbsp sugar, 1 tbsp sesame oil, 1 minced garlic clove, and 1/4 tsp black pepper for 15 minutes. Blanch the spinach in boiling water for 30 seconds, then immediately transfer to an ice bath, squeeze out excess water, and chop. Julienne the carrot, onion, and bell pepper, slice the mushrooms, and mince the remaining garlic.
Cook Noodles
Cook the sweet potato noodles in boiling water according to package instructions (usually 6-8 minutes) until al dente. Drain, rinse with cold water, and drain thoroughly. Toss with 1 tbsp sesame oil to prevent sticking.
Sauté Vegetables & Beef
Heat 1 tbsp vegetable oil in a large pan or wok over medium-high heat. Cook the marinated beef for 2-3 minutes until browned, then set aside. In the same pan, add another 1 tbsp oil and sauté the julienned carrot, onion, and bell pepper for 3-4 minutes until slightly tender but still crisp. Add the sliced mushrooms and remaining minced garlic, and cook for another 2-3 minutes. Set the vegetables aside.
Combine & Season
In a large bowl, whisk together the remaining 4 tbsp soy sauce, 2 tbsp sugar, 2 tbsp sesame oil, 1 tbsp toasted sesame seeds, and 1/4 tsp black pepper. Add the cooked noodles, sautéed beef, sautéed vegetables, and blanched spinach to the dressing. Toss everything together thoroughly until all ingredients are evenly coated. Taste and adjust seasoning if needed.
Serve
Serve immediately warm, or at room temperature. Garnish with extra toasted sesame seeds if desired.
Extra Tips
► Don't overcook the vegetables; they should retain their crisp texture and vibrant colors.
► Rinse the noodles immediately with cold water after cooking to prevent them from sticking together.
► Taste the sauce and adjust the seasonings to your preference if needed.
