Cook the sweet potato noodles in boiling water according to package instructions (usually 6-8 minutes) until al dente. Drain, rinse with cold water, and drain thoroughly. Toss with 1 tbsp sesame oil to prevent sticking.

Add the cooked noodles, sautéed beef, sautéed vegetables, and blanched spinach to the dressing. Toss everything together thoroughly until all ingredients are evenly coated. Taste and adjust seasoning if needed.
