Press excess water from the tofu using a kitchen towel, then cut into 2-3 cm cubes. Heat 1 tbsp of oil in a large skillet over medium-high heat. Add the tofu cubes and pan-fry until golden brown and crispy on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.

In the same skillet, add a little more oil if needed. Add the chopped onion and sauté over medium heat until translucent, about 5-7 minutes. Add the minced garlic and grated ginger, and cook for another 1-2 minutes until fragrant.

Stir in the garam masala, turmeric, cumin, coriander, chili powder, and sweet paprika. Cook for 30 seconds until fragrant. Pour in the crushed tomatoes, coconut milk, the cashews blended with water, sugar, salt, and pepper. Stir well and bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes to allow the flavors to meld and the sauce to thicken.
