ingredients
Steps
Prepare Vegetables
Peel and dice the carrots, potatoes, celery root, and parsnip. Finely chop the yellow onion. Let the frozen green peas and green beans thaw.
Make the Base
In a large pot, heat the vegetable oil over medium heat. Add the chopped yellow onion and sauté until translucent, about 3-5 minutes.
Cook the Soup
Add the diced carrots, potatoes, celery root, and parsnip to the onion. Pour in the vegetable broth, season with salt and pepper. Bring to a boil, then reduce heat to low and simmer for about 15-20 minutes, or until the vegetables are almost tender. Then add the green peas and green beans and cook for another 5-7 minutes, until all vegetables are fully tender.
Serve
Taste and adjust seasonings if necessary. Remove from heat and stir in the chopped fresh parsley. Serve hot, optionally with a dollop of sour cream or fresh bread.
Extra Tips
► The soup will be even more flavorful if you sprinkle a little fresh dill on top before serving.
► If you prefer a thicker soup, take out a ladleful of vegetables, mash them, and then stir them back into the soup.
► Don't overcook the vegetables; they should retain a slight bite and their nutritional value.
