Preheat your oven to 175°C (350°F). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom and up the sides of a 9-inch (23 cm) pie dish. Bake for 8-10 minutes until lightly golden, then remove and let cool completely.

In a large bowl, whisk together the sweetened condensed milk, Key lime juice, and egg yolks until smooth and well combined. Pour the filling into the cooled pie crust.

Return the pie to the oven and bake for another 15-17 minutes, or until the edges of the filling are set but the center still jiggles slightly. Remove from the oven, let it cool to room temperature, then refrigerate for at least 4 hours, or ideally overnight.
