Steps
Soak Rice & Cinnamon
Rinse the rice thoroughly. In a large bowl, combine the rinsed rice and cinnamon sticks with 1 liter (4 cups) of water. Let it soak at room temperature for at least 4 hours, or preferably overnight in the refrigerator.
Blend
After soaking, transfer the rice, cinnamon sticks, and the soaking water to a high-speed blender. Blend on high until the mixture is completely smooth and the rice grains are fully pulverized, about 2-3 minutes.
Strain
Pour the blended mixture through a fine-mesh sieve or a cheesecloth-lined colander into a large pitcher or bowl. Press down on the solids to extract as much liquid as possible. Discard the remaining solids.
Sweeten & Chill
Stir in the granulated sugar, whole milk (if using), and vanilla extract into the strained liquid. Add an additional 500ml (2 cups) of cold water to reach your desired consistency. Taste and adjust sweetness if needed. Chill the horchata in the refrigerator for at least 1-2 hours before serving.
Serve
Serve the chilled horchata over ice, garnished with a light sprinkle of ground cinnamon.
