Prepare Marrow

Preheat your oven to 220°C (425°F). If you haven't already, soak the marrow bones in cold water for 1-2 hours, changing the water a few times. Pat the bones dry, then generously season the marrow side with salt and pepper.

Roast and Toast

Place the seasoned marrow bones on a baking sheet lined with parchment paper, marrow side up. Roast for 15-20 minutes, or until the marrow is soft and creamy. Meanwhile, toast the bread slices in a toaster or pan until golden brown and crispy. Rub the toasted bread with the cut garlic cloves.

Remove the marrow bones from the oven. Using a small spoon, scoop out the warm marrow from the bones and spread it onto the garlic-rubbed toast. Garnish with freshly chopped parsley and thinly sliced red onion. Drizzle with a little lemon juice and serve immediately.
