Kaiserschmarrn, also known as Emperor's Mess, is a true classic dessert that captivates you in an instant. This light, sweet pancake-like dish, torn into pieces and caramelized, is a perfect choice for breakfast, brunch, or even as a dessert. Legend has it that it was Emperor Franz Joseph's favorite sweet treat, hence its name. Prepare this simple yet irresistible delicacy yourself and enjoy the soft, sweet flavors alongside a cup of coffee or tea!

Steps

1

Prepare the Batter

Separate the eggs. In a large bowl, whisk the egg yolks smooth with the milk, flour, 2 tablespoons of granulated sugar, a pinch of salt, and the vanilla sugar or extract. In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg white foam into the yolk mixture. If using raisins, add them now.

2

Cook and Caramelize

Melt 1 tablespoon of butter in a large, preferably non-stick pan over medium heat. Pour in the batter and cook one side until golden brown, about 5-7 minutes. Flip the batter (or if it's too large, cut it into quarters and flip the pieces), then use a wooden spoon or spatula to tear it into smaller, uneven pieces. Add the remaining 1 tablespoon of butter and 1 tablespoon of granulated sugar, then continue to cook, stirring, until the sugar caramelizes and all sides of the pieces are beautifully golden brown, which takes another 5-8 minutes.

3

Serve

Dust the finished Kaiserschmarrn with powdered sugar and serve immediately with apple compote, fruit jam, or fresh fruits.

Extra Tips

If you like raisins, soak them in a little rum or water before baking for an even juicier result.

For the perfect caramelized layer, don't skimp on the sugar at the end of cooking, and let it brown nicely.

When serving, try it with different jams or fresh fruits like blueberries or raspberries.
