Prepare the Dough

In a large bowl, combine the flour, yeast, sugar, and salt. Gradually add the warm water and 1 tbsp of vegetable oil, then knead until you have a smooth, slightly sticky dough. Cover with a clean kitchen towel and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.

Prepare Filling & Form

While the dough is rising, prepare the filling: mix the brown sugar, ground cinnamon, and chopped peanuts or walnuts in a small bowl. Once the dough has risen, lightly oil your hands and divide it into 8 equal portions. Flatten each portion in your palm, place about 1-1.5 tbsp of filling in the center, then carefully seal the edges of the dough to enclose the filling. Form into a ball.

Fry the Pancakes

Heat 2-3 tbsp of vegetable oil in a non-stick pan over medium heat. Place 2-3 dough balls in the pan (do not overcrowd). Once the bottom is lightly golden, flip them over and use a spatula or a Hotteok press to flatten them into pancake shapes. Fry each side until golden brown and crispy, about 2-3 minutes per side. Repeat with the remaining dough, adding more oil to the pan if needed.

Serve the warm Hotteok immediately. Be careful, the filling can be very hot!
