Prepare Potatoes

Peel the potatoes, cut them into larger pieces, and boil them in salted water until tender (about 15-20 minutes). Drain them and mash them while still warm with a potato ricer or masher. Let them cool down.

Assemble Dough

Mix the cooled, mashed potatoes with the flour, egg, and salt. Quickly knead into a smooth, non-sticky dough. Do not over-knead, or the dumplings will become tough.

Prepare Plums

Wash the plums, cut them in half, and remove the pits. Place a pinch of cinnamon sugar (mix the 3 tbsp sugar with cinnamon) into the cavity of each plum half.

Form Dumplings

On a floured surface, roll out the dough to about 3-4 mm thick. Cut it into approximately 8x8 cm (3x3 inch) squares. Place a plum half in the center of each square, then carefully seal the dough around it, ensuring the plum is completely covered. Form them into nice, round dumplings.

Cook and Toast

Bring a large pot of salted water to a boil. Add the dumplings and cook them until they float to the surface, then continue to cook for another 3-5 minutes. Meanwhile, melt the butter in a pan, add the breadcrumbs, and toast them until golden brown, stirring constantly over medium heat (about 5-7 minutes).

Remove the cooked dumplings from the water with a slotted spoon, drain them, and then roll them in the toasted breadcrumbs. Serve warm, sprinkled with powdered sugar or with sour cream, if desired.

Extra Tips

Mash the potatoes while they are still warm; this makes it much easier to knead a smooth dough.

If your plums are very tart, add a little extra sugar to the filling, or choose sweeter plums.
