ingredients
Steps
Prepare Eggplant
Preheat your oven to 200°C (180°C fan-assisted). Wash the eggplants, cut them in half lengthwise, then carefully scoop out their flesh with a spoon, leaving about a 1 cm thick border. Chop the scooped-out eggplant flesh. Lightly salt the eggplant 'boats' and set aside.
Make the Filling
Heat olive oil in a pan over medium heat. Add the finely chopped onion and sauté until translucent (about 5 minutes). Add the minced garlic and cook for another 1 minute. Then add the ground meat and cook until browned and crumbly (about 8-10 minutes). Stir in the chopped eggplant flesh, crushed tomatoes, oregano, paprika, salt, and pepper. Cook for another 10-15 minutes, until most of the liquid has evaporated and the filling is thick.
Stuff and Bake
Place the eggplant 'boats' on a baking sheet lined with parchment paper. Fill them evenly with the meat mixture. Sprinkle grated cheese over the top. Bake in the preheated oven for 25-30 minutes, or until the eggplant is tender and the cheese is golden brown. Garnish with fresh, chopped parsley before serving.
Extra Tips
► If you like, lightly salt the inside of the eggplant before baking, let it sit for 15 minutes, then pat dry. This helps remove any bitterness.
► Experiment with spices! A pinch of chili flakes or cumin also works wonderfully with the filling.
► Before serving, sprinkle with fresh parsley or basil for an even more delicious experience.
