Prepare Eggplant

Preheat your oven to 200°C (180°C fan-assisted). Wash the eggplants, cut them in half lengthwise, then carefully scoop out their flesh with a spoon, leaving about a 1 cm thick border. Chop the scooped-out eggplant flesh. Lightly salt the eggplant 'boats' and set aside.

Make the Filling

Heat olive oil in a pan over medium heat. Add the finely chopped onion and sauté until translucent (about 5 minutes). Add the minced garlic and cook for another 1 minute. Then add the ground meat and cook until browned and crumbly (about 8-10 minutes). Stir in the chopped eggplant flesh, crushed tomatoes, oregano, paprika, salt, and pepper. Cook for another 10-15 minutes, until most of the liquid has evaporated and the filling is thick.

Stuff and Bake

Place the eggplant 'boats' on a baking sheet lined with parchment paper. Fill them evenly with the meat mixture. Sprinkle grated cheese over the top. Bake in the preheated oven for 25-30 minutes, or until the eggplant is tender and the cheese is golden brown. Garnish with fresh, chopped parsley before serving.

Extra Tips

If you like, lightly salt the inside of the eggplant before baking, let it sit for 15 minutes, then pat dry. This helps remove any bitterness.
