Slice the baguette into approximately 1.5 cm thick pieces. Dice the tomatoes finely and chop the basil. Clean and slice the mushrooms. Clean the chicken liver and cut it into smaller pieces. Peel and finely chop the onion and garlic.

In a bowl, combine the diced tomatoes, chopped basil, 2 cloves of minced garlic, 2 tbsp olive oil, salt, and pepper. Set aside to allow the flavors to meld.

Heat 1 tbsp olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes. Add 2 cloves of minced garlic and chopped parsley, then cook for another 1-2 minutes. Deglaze with white wine (if using) and let it evaporate. Season with salt and pepper to taste. Set aside.

Liver Pâté Topping

Melt the butter in a skillet over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes. Add 1 clove of minced garlic and the chicken liver, then cook for 5-7 minutes until the liver is browned on all sides but still slightly pink inside. Deglaze with brandy or white wine and let it evaporate. Add thyme, salt, and pepper. Remove from heat, stir in the heavy cream, then blend with an immersion blender or food processor until creamy. Taste and adjust seasoning if needed.

Preheat your oven to 180°C (350°F). Arrange the baguette slices on a baking sheet lined with parchment paper. Bake for 5-8 minutes until lightly golden and crispy. Remove from the oven. Rub the warm toasted bread with a halved garlic clove (optional, but recommended). Spoon the tomato, mushroom, and liver pâté toppings onto the toasted bread and serve immediately.
