300 ml Cold heavy cream (min. 35% fat)
50 g Powdered sugar
5 ml Vanilla extract
15 ml Freshly squeezed lemon juice
100 g Digestive biscuits
30 g Melted butter

Crush the digestive biscuits into small pieces, then mix them with the melted butter. Divide the mixture among the bottoms of 4 glasses and press down gently. Place in the refrigerator while you prepare the mousse.

Make strawberry puree

Wash and hull the strawberries. Set aside a few for garnish, then puree the rest with an immersion blender or fork. Stir in the lemon juice and a little powdered sugar to taste if the strawberries are not sweet enough.

In a cold bowl, whip the cold heavy cream with the powdered sugar and vanilla extract until stiff peaks form. Be careful not to over-whip, as it can curdle.
