1 pc Egg yolk
1 pc Whole egg for brushing

5 g Baking powder

Prepare the Dough

In a large bowl, mix the flour with baking powder and salt. Add the cold, cubed butter and rub it into the flour until it resembles coarse crumbs. Then, add the grated cheese, egg yolk, and sour cream, quickly kneading it into a smooth dough. Do not overwork the dough! Wrap it in plastic film and refrigerate for at least 30 minutes.

Shape and Preheat

Preheat your oven to 180°C (160°C for fan-assisted ovens). On a lightly floured surface, roll out the dough to about 0.5 cm thickness. Using a sharp knife or a pastry wheel, cut the dough into sticks approximately 1 cm wide and 8-10 cm long. Place the sticks on a baking sheet lined with parchment paper.

Brush and Bake

Whisk the whole egg and brush it over the top of the sticks. Sprinkle generously with the remaining grated cheese. Bake in the preheated oven for 15-20 minutes, or until they are golden brown and crispy. Let them cool slightly on the baking sheet before serving warm or at room temperature.

Extra Tips

For a truly flaky dough, make sure to use cold butter cut into cubes when mixing it with the flour.

Don't overwork the dough; mix it just until it comes together, otherwise, it will become tough.
