Place 1 liter of water in a pot with the kombu seaweed. Heat over medium heat until it just begins to simmer (about 5-7 minutes). Remove the kombu, then add the katsuobushi. Remove from heat and let it steep for 2-3 minutes until the bonito flakes settle. Strain the dashi stock through a fine-mesh sieve and keep warm.

Prepare Ingredients

While the dashi is preparing, rehydrate the dried wakame seaweed in cold water for 5 minutes, then drain and cut into smaller pieces. Cube the silken tofu into 1-2 cm pieces and thinly slice the green onions.

Add Miso Paste

Scoop a small ladleful of warm dashi stock into a bowl and whisk in the miso paste until completely dissolved. Pour this mixture back into the pot with the rest of the dashi and stir well. It's important that the soup does not boil after adding the miso!
