Preheat your oven to 190°C (375°F). Gently clean the mushroom caps with a damp cloth, then carefully remove the stems. Finely chop the mushroom stems and set them aside.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes). Add the minced garlic and the reserved chopped mushroom stems, then cook for another 3-5 minutes until softened. Add the spinach and cook until it wilts and its liquid evaporates (about 5-7 minutes). Remove from heat and let it cool slightly.

In a bowl, combine the cream cheese, grated Parmesan, and the spinach mixture seasoned with salt, pepper, and nutmeg. Mix thoroughly until well combined. Generously stuff each mushroom cap with the spinach and cream cheese filling.

Extra Tips

If you don't have fresh spinach, you can use frozen, just make sure to squeeze out all the excess water thoroughly.
