Steps
Prepare Mushrooms
Preheat your oven to 190°C (375°F). Gently clean the mushroom caps with a damp cloth, then carefully remove the stems. Finely chop the mushroom stems and set them aside.
Make the Filling
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes). Add the minced garlic and the reserved chopped mushroom stems, then cook for another 3-5 minutes until softened. Add the spinach and cook until it wilts and its liquid evaporates (about 5-7 minutes). Remove from heat and let it cool slightly.
Mix and Stuff
In a bowl, combine the cream cheese, grated Parmesan, and the spinach mixture seasoned with salt, pepper, and nutmeg. Mix thoroughly until well combined. Generously stuff each mushroom cap with the spinach and cream cheese filling.
Bake and Serve
Place the stuffed mushroom caps on a baking sheet lined with parchment paper. Optionally, sprinkle the tops with breadcrumbs. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown. Serve hot, either on their own or as a side dish.
Extra Tips
► If you don't have fresh spinach, you can use frozen, just make sure to squeeze out all the excess water thoroughly.
► Don't throw away the mushroom stems; chop them finely and add them to the filling for extra flavor.
► Experiment with other cheeses too, like feta or goat cheese, which also pair wonderfully with spinach.
