Prepare Potatoes
Peel the potatoes, cut them into cubes, then boil them in salted water until tender (approx. 20-25 minutes). Drain them and mash them while still warm with a potato masher or fork, then let them cool completely.
Prepare Dough
In a small bowl, crumble the fresh yeast into the lukewarm milk with a pinch of sugar (if using) and let it activate for 5-10 minutes. In a large bowl, mix the flour with salt and pepper. Add the cooled mashed potatoes, cold diced butter, sour cream, 2 eggs, and the activated yeast mixture. Knead the dough thoroughly until it is smooth and elastic (approx. 10-15 minutes). Cover with a kitchen towel and let it rise in a warm place for 1 hour, or until doubled in size.
Shape and Rise
Preheat your oven to 180°C (160°C for convection ovens). Line a baking tray with parchment paper. Turn the risen dough out onto a lightly floured surface and roll it out to about 2 cm thick. Use a scone cutter or a glass to cut out circles from the dough and arrange them closely together on the baking tray. Cover again and let rise for another 20-30 minutes.
Bake

► If you don't have fresh yeast, you can use 7g of dried yeast, which can be mixed directly with the flour.
