In a large pot, heat the oil or lard over medium heat. Add the finely chopped onion and sauté until translucent for about 5-7 minutes. Add the sliced smoked sausage (or diced bacon) and fry for another 5 minutes until lightly browned.

Add Vegetables & Spices

Add the sliced carrots, parsley root, and minced garlic to the pot. Sauté for 5 minutes. Remove from heat, sprinkle with flour and paprika powder, then stir quickly to prevent the paprika from burning.

Pour in cold water or broth, stirring continuously to avoid lumps. Add the soaked and drained lentils, bay leaves, salt, and pepper. Bring to a boil, then reduce heat to low and simmer, covered, for about 60-75 minutes, or until the lentils are completely tender. Stir occasionally and add more water if needed.

Once the lentils are tender, add the vinegar and taste, seasoning with more salt, pepper, or vinegar if necessary. Remove the bay leaves. When serving, add a dollop of sour cream to each portion. Serve with fresh bread.

Extra Tips

If you have time, soak the lentils for at least 2-3 hours or even overnight before cooking. This shortens cooking time and makes them easier to digest.

Instead of smoked sausage, you can also use smoked pork hock or shoulder for an even richer flavor.
