200 g grated cheddar cheese
250 ml whole milk
30 g butter
30 g all-purpose flour

In a medium saucepan, melt 30g of butter over medium heat. Add 30g of all-purpose flour and cook, stirring constantly, for 1-2 minutes until a light golden roux forms.

Slowly and gradually pour in 250ml of milk into the roux, whisking continuously to prevent lumps. Cook over medium heat until the mixture thickens and begins to bubble, about 3-5 minutes.

Remove the saucepan from the heat and add 200g of grated cheddar cheese. Stir until the cheese is completely melted and the sauce is smooth and creamy. If needed, return to low heat, but do not boil.
