Prepare Vegetables

Cut the bell peppers, zucchini, and red onion into approximately 2-3 cm pieces. Leave the mushrooms whole or halve them if large. In a large bowl, combine the chopped vegetables with soy sauce, sesame oil, grated ginger, minced garlic, and lime juice. Let them marinate for at least 15 minutes, or up to 30 minutes, while you prepare the sauce.

Make Peanut Sauce

In a small saucepan or blender, combine the peanut butter, coconut milk, soy sauce, lime juice, honey (or maple syrup), sriracha (if using), grated ginger, and minced garlic. Heat over low heat, stirring constantly, until smooth and creamy. If too thick, add 2-4 tbsp of water until you reach your desired consistency. Taste and adjust seasoning if needed.

Assemble & Grill Skewers

Thread the marinated vegetables alternately onto the wooden skewers. Preheat your grill to medium-high heat. Grill the skewers for 10-15 minutes, turning regularly, until the vegetables are tender-crisp and slightly charred. Serve immediately with the freshly made peanut satay sauce.

Extra Tips

If you don't have a grill, you can cook the skewers in a pan or oven. In the oven, bake at 200°C (fan-assisted) for about 15-20 minutes until tender and slightly charred.

The peanut sauce can be made in advance and stored in the fridge for up to 3-4 days. Reheat before serving and thin with a little water if needed.

Vary the vegetables to your liking! Broccoli, cauliflower, sweet potato, or pineapple also work wonderfully on skewers.
