Melt the butter, then set it aside to cool. Grease a Madeleines mold thoroughly with butter and flour, then place it in the refrigerator.

In a large bowl, whisk the eggs with the sugar and a pinch of salt until light and thick. In another bowl, sift together the flour and baking powder. Gradually add the flour mixture to the egg mixture, gently folding until just combined. Stir in the lemon zest and the cooled melted butter until smooth. Cover the batter and refrigerate for at least 30 minutes, or up to 1-2 hours.

Preheat your oven to 190°C (375°F, or 175°C/350°F for convection). Remove the cold Madeleines mold from the refrigerator. Spoon the batter into the molds, filling them about two-thirds full. Bake for 8-12 minutes, or until the edges are golden brown and the characteristic hump appears in the center. Remove from the oven, let cool in the mold for a few minutes, then turn out onto a wire rack to cool completely.
