320 g Puff pastry, fresh
250 g Camembert cheese
6 pieces Fresh figs, medium-sized
2 tbsp Honey
1 tbsp Fresh thyme leaves
100 ml Balsamic vinegar
1 tbsp Olive oil

Balsamic Glaze

In a small saucepan, bring the balsamic vinegar to a boil over medium heat. Let it simmer for about 10-15 minutes, or until it thickens into a syrupy consistency. Remove from heat and set aside to cool.

Prep and Preheat

Preheat your oven to 200°C (180°C for fan-assisted ovens). Unroll the puff pastry onto a baking sheet lined with parchment paper. Score a border about 1-2 cm from the edge of the pastry, but do not cut all the way through. Lightly brush the center of the pastry with olive oil, then sprinkle with a pinch of salt and pepper.

Assemble and Bake

Slice the Camembert cheese and figs. Arrange the alternating slices of cheese and figs over the olive-oiled center of the pastry. Drizzle with honey, then sprinkle with fresh thyme leaves. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy, and the cheese is melted and bubbly.

Remove the tart from the oven and let it cool for a few minutes. Before serving, generously drizzle with the prepared balsamic glaze. It's delicious served warm or at room temperature.

You can prepare the balsamic glaze in advance; it keeps for days in the fridge.

If fresh figs are not available, you can use dried figs, rehydrated in a little warm water.
