ingredients
Steps
Prep and Sauté
Preheat your oven to 180°C (350°F). In a medium oven-safe skillet (approx. 24 cm / 9.5 inches diameter), heat the olive oil over medium heat. Add the chopped red onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 1 minute until fragrant.
Add Spinach
Add the fresh spinach to the skillet and cook until it wilts and all the moisture has evaporated (about 3-5 minutes). Remove the skillet from the heat and let it cool slightly.
Egg Mixture
In a large bowl, whisk the eggs with the milk or cream. Season with salt and pepper to taste. Stir in the spinach and onion mixture and two-thirds of the crumbled goat cheese.
Bake
Pour the egg mixture into the oven-safe skillet. Sprinkle the remaining goat cheese and pine nuts over the top. Bake in the preheated oven for 20-25 minutes, or until the frittata is golden brown and set in the center. Let it rest for 5 minutes before serving.
Extra Tips
► Sprinkle some fresh parsley or chives on top of the frittata before serving for an even fresher taste.
► If you don't have goat cheese, you can use feta cheese instead for a similarly delicious result.
► Frittata is also delicious cold, making it perfect for leftover lunches or picnics.
