Press excess water from the tofu using paper towels, then cut into 2 cm cubes. Heat 1 tbsp coconut oil in a large skillet over medium heat. Fry the tofu cubes until golden brown on all sides, about 8-10 minutes. Remove from the skillet and set aside.

Build the Base

In the same skillet, add the remaining 1 tbsp oil. Sauté the chopped onion for 3-4 minutes until translucent. Add the minced garlic and grated ginger, and cook for another 1 minute until fragrant.

Cook the Curry

Stir in the red curry paste and cook for 1 minute to release its aromas. Pour in the coconut milk and vegetable broth, stirring until smooth. Add the tamari, salt, and pepper. Bring to a boil, then reduce heat and simmer for 5 minutes to allow the flavors to meld.

Add Broccoli & Tofu

Add the broccoli florets to the sauce and cook for 5-7 minutes, until the broccoli is tender-crisp. Stir the fried tofu cubes back into the curry and cook for another 2 minutes to heat through. Finally, stir in the fresh lime juice.

Serve immediately and hot with freshly cooked basmati rice. Garnish with chopped fresh cilantro.

Extra Tips

For extra crispy tofu, toss it with a little cornstarch before frying.
