In a small bowl, steep saffron threads in 60 ml of warm chicken broth for 10 minutes. Prepare all vegetables and seafood.

In a large paella pan or wide, shallow skillet, heat 2 tbsp of olive oil over medium heat. Add chopped onion and bell pepper, sauté for 5-7 minutes until softened. Add minced garlic and smoked paprika, cook for another 1 minute until fragrant. Stir in tomato paste and diced tomatoes, cook for 5 minutes.

Add Rice and Broth

Add the rice to the pan and stir to coat all grains with the vegetable mixture. Pour in the saffron-infused broth and the remaining chicken broth. Season with salt and pepper to taste. Bring to a boil, then reduce heat to low and simmer uncovered for 15-20 minutes, or until the rice has absorbed most of the liquid and is almost tender. Do not stir!

Arrange the shrimp, mussels, and calamari on top of the rice. Cover the pan (if you have a lid, or use foil) and cook for another 5-10 minutes, or until the mussels have opened, the shrimp are pink, and the calamari is tender. Discard any mussels that did not open.

Remove the paella from the heat and let it rest for 5 minutes. Garnish with fresh chopped parsley and lemon wedges. Serve immediately.
