Steps

1

Prepare the Base

In a large pot, heat the oil or lard over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Add the minced garlic and cook for another 1 minute until fragrant. Remove from heat, stir in the sweet paprika powder and flour, mixing quickly to avoid lumps.

2

Cook and Season

Pour in the vegetable broth or water, stirring constantly to prevent lumps. Add the drained sauerkraut, diced potatoes, ground caraway seeds, and bay leaves. Season with salt and pepper to taste. Bring to a boil, then reduce heat to low and simmer, covered, for 20-25 minutes, or until the potatoes are tender.

3

Sausage and Sour Cream

Meanwhile, slice the Frankfurter sausages or smoked sausage into rounds. Once the potatoes are tender, add the sausage slices to the soup and cook for another 5 minutes. In a small bowl, whisk the sour cream with a ladleful of hot soup until smooth, then slowly stir it back into the pot. Do not boil the soup after adding the sour cream, just heat it through.

4

Serve

Remove from heat and discard the bay leaves. Garnish with freshly chopped parsley and serve hot immediately.

Extra Tips

If you like it spicy, add a pinch of hot paprika along with the sweet paprika.

The soup tastes even better if you prepare it a day in advance, allowing the flavors to meld.

Taste before serving and adjust seasonings with salt and pepper if needed.
