Prepare the base cream

In a heatproof bowl, whisk together the egg yolks, granulated sugar, and Marsala wine. Place the bowl over a saucepan of simmering water (bain-marie), ensuring the bottom of the bowl does not touch the water. Continuously whisk with a hand whisk for about 8-10 minutes until the mixture thickens, becomes light in color, and frothy. Remove from heat and stir in the vanilla extract. Let it cool completely.

Assemble Mascarpone cream

In a large bowl, gently fold the cooled egg yolk mixture into the mascarpone cheese until smooth and creamy. Be careful not to overmix, as mascarpone can curdle easily.

Layering

Pour the cooled espresso into a shallow dish. Quickly dip the ladyfingers into the espresso, coating both sides, but do not soak them completely to prevent them from becoming too soggy. Arrange a single layer of coffee-soaked ladyfingers at the bottom of a 8x8 inch (20x20 cm) dish or similar. Spread half of the mascarpone cream over the ladyfingers, then repeat with another layer of coffee-soaked ladyfingers and the remaining cream.

Chill and serve

Cover the dish with plastic wrap and refrigerate for at least 4-6 hours, or ideally overnight, to allow the flavors to meld and the dessert to set. Before serving, generously dust with unsweetened cocoa powder using a sieve. Slice and enjoy!

For the best results, prepare your Tiramisu a day in advance to allow the flavors to meld perfectly.

Use very strong, freshly brewed espresso for the most intense coffee flavor.

If you prefer, you can omit the Marsala wine or substitute it with a splash of coffee liqueur for extra flavor.
