Steps

1

Boil Potatoes

Wash the potatoes thoroughly, then place them unpeeled in a large pot. Cover with cold water, add plenty of salt, and bring to a boil. Cook over medium heat for 20-25 minutes, or until tender but still holding their shape. Drain, let cool slightly, then peel and cut into approximately 1.5-2 cm (0.6-0.8 inch) cubes or slices.

2

Prepare Dressing

While the potatoes are cooking, prepare the dressing. In a large bowl, whisk together the Dijon mustard, whole grain mustard, mayonnaise, sour cream, apple cider vinegar, oil, sugar, salt, and pepper. Taste and adjust seasonings as needed.

3

Prepare Vegetables

Peel and finely dice the red onion. Also finely dice the dill pickles. Finely chop the fresh dill and parsley.

4

Combine and Chill

Add the still warm potatoes to the bowl with the dressing. Add the finely diced red onion, dill pickles, dill, and parsley. Gently fold everything together, being careful not to mash the potatoes. Cover the bowl and refrigerate for at least 2 hours, but ideally overnight, to allow the flavors to fully meld. Before serving, taste again and adjust salt or pepper if necessary.

Extra Tips

For the best flavor, prepare the salad at least 2-3 hours before serving to allow the flavors to meld.

If you like spicier flavors, add a pinch of cayenne pepper or a little hot paprika paste.

Do not overcook the potatoes, as they can fall apart and the salad's texture will not be ideal.
