1 clove Garlic, minced
1 tbsp Olive oil
0.3 cup Fresh parsley, chopped
0.3 cup Fresh mint, chopped

Prepare Falafel

Heat enough oil in a pan over medium heat, or preheat your oven/air fryer according to the falafel package instructions. Fry or bake the falafel balls until golden brown and crispy, about 5-8 minutes. Set aside on a paper towel to drain excess oil.

While the falafel cooks, prepare the vegetables. Wash and dry the mixed salad greens. Chop the cucumber, cherry tomatoes, and red onion. Crumble the feta cheese, and chop the fresh parsley and mint.

In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, olive oil, salt, and pepper. Mix until smooth, and if it's too thick, add a little more water until you reach the desired consistency.
