ingredients
Steps
Onion and Garlic
In a medium saucepan, heat 2 tbsp of olive oil over medium heat. Add the finely chopped red onion and sauté until translucent, about 3-5 minutes. Then add the minced garlic and cook for another 1 minute until fragrant, being careful not to burn it.
Toast the Rice
Add the rinsed and drained long-grain rice to the saucepan. Sauté it with the onion and garlic for 2-3 minutes, stirring constantly, until the edges of the rice grains become translucent.
Cook and Add Corn
Pour in the vegetable broth, add salt and pepper. Stir, then bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and cook for 15 minutes. At this point, add the sweet corn, stir it in gently, then cover again and cook for another 5-10 minutes, or until the rice is tender and all the liquid has been absorbed.
Rest and Serve
Remove the saucepan from the heat and let it rest, covered, for 5 minutes. Then, gently fluff the rice with a fork. Sprinkle with freshly chopped parsley and serve immediately as a side dish or a light main course.
Extra Tips
► For an even richer flavor, sauté a little bacon or sausage before adding the onion.
► If using frozen corn, there's no need to thaw it beforehand; just add it directly to the rice.
► Experiment with other spices, such as a pinch of smoked paprika or chili for a spicier kick.
