In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the egg, then add the milk, oil, and vanilla extract. Mix until smooth.

Combine and Bake

Pour the wet ingredients into the dry ingredients and gently mix with a wooden spoon or spatula until just combined. Do not overmix! Fold in the blueberries. Spoon the batter into the muffin cups, filling them about two-thirds full. Bake at 190°C (175°C fan) for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
