Prepare Zucchini

Preheat your oven to 180°C (160°C for fan-assisted ovens). Wash the zucchinis, cut them in half lengthwise, and scoop out the seedy pulp with a spoon. Lightly salt the insides and set aside.

Prepare Filling

Heat olive oil in a pan over medium heat. Add the finely chopped onion and sauté until translucent (about 5 minutes). Add the minced garlic and cook for another 1 minute. Add the ground meat and cook, breaking it up, until browned (about 8-10 minutes). Stir in the rice, tomato paste, paprika, marjoram, salt, and pepper. Pour in a little water (about 50 ml) and cook for 5 minutes until the rice softens slightly.

Stuff and Bake

Fill the zucchini halves with the meat mixture, then place them on a baking sheet lined with parchment paper. Bake in the preheated oven for 30 minutes. After that, remove from the oven, spread sour cream on top, and if using, sprinkle with grated cheese. Return to the oven for another 15-20 minutes, or until the zucchini is tender and the sour cream is golden brown.

Serve

Remove from the oven, let it rest for a few minutes, then serve hot. It's excellent with a fresh salad or simply on its own.

Extra Tips

If you like, you can also use the scooped-out zucchini flesh in the filling; just chop it finely and add it to the meat.

Sprinkle fresh parsley on top before serving for an even fresher taste.
