Shaping Manti

Divide the dough into two portions. On a floured surface, roll out one portion very thinly (about 1-2 mm thick). Cut the dough into approximately 2x2 cm squares. Place a small pinch (about half a teaspoon) of filling in the center of each square. Pinch the four corners of the dough together in the middle to form small dumplings. Repeat with the second portion of dough.

Bring a large pot of salted water to a boil. Add the manti in batches and cook for 8-10 minutes until they are tender and float to the surface. Meanwhile, prepare the yogurt sauce: mix the yogurt with the minced garlic and a pinch of salt. For the butter sauce, melt the butter in a small pan, add the pul biber and dried mint, then sauté for 1-2 minutes over low heat until fragrant.
