Prepare Pan
Line an approximately 20x20 cm (8x8 inch) baking pan with parchment paper, leaving an overhang on the sides to easily lift out the bars. In a large bowl, combine the rolled oats, chia seeds, and salt.
Melt Wet Ingredients
In a small saucepan over low heat, melt the coconut oil, peanut butter, and honey (or maple syrup). Stir until smooth and well combined. Remove from heat and stir in the vanilla extract.
Combine Mixtures
Pour the wet mixture into the dry ingredients and mix thoroughly until all the oats are coated. Add half of the chocolate chips and fold them into the mixture.
