Bread and Yogurt
Cut the pide bread into approximately 2x2 cm (0.8x0.8 inch) cubes. In a pan, toast the bread cubes in a little oil until golden brown, then set aside. In a bowl, mix the Greek yogurt with 2 cloves of minced garlic, salt, and pepper. Refrigerate until serving.
Prepare the Meat
In a large pan or wok, over high heat, sear the thinly sliced beef in batches with a little oil until nicely browned and cooked through. Season with salt, pepper, and a pinch of oregano. Keep warm.
Tomato Sauce
In another pan, melt 20 g (0.7 oz) of butter. Add the remaining 2 cloves of minced garlic and sauté for 1 minute. Pour in the crushed tomatoes and tomato paste. Season with salt, pepper, oregano, and sweet paprika. Bring to a boil, then simmer on low heat for 10-15 minutes until thickened.
Grilled Vegetables
Halve the tomatoes and green peppers. Grill them in a grill pan or oven until slightly charred and tender.
Assemble and Serve
Arrange the toasted bread cubes on the bottom of a serving plate. Drizzle generously with the hot tomato sauce. Place the seared meat on top. Add a large spoonful of garlic yogurt to one side of the plate. Garnish with the grilled tomatoes and peppers.
Butter Drizzle
In a small saucepan, melt 80 g (2.8 oz) of butter. Once the butter is melted and foamy, remove from heat and stir in the chili flakes (if using). Immediately drizzle this hot butter sauce over the entire Iskender kebab. Serve immediately!
Extra Tips
► For even more flavor, marinate the meat overnight with a little oil, oregano, salt, and pepper.
► Instead of pide bread, you can use other thick, soft flatbreads, but pide provides the authentic taste.
► Prepare the butter drizzle just before serving to ensure it's hot when poured over the kebab.
