Dice the chicken thighs into 2-3 cm (1 inch) pieces. Peel and cut the potatoes, carrots, and onion into similar-sized cubes. Rinse the rice thoroughly with cold water until the water runs clear, then set aside.

Heat the vegetable oil in a large pot or deep skillet over medium heat. Add the diced onion and sauté for 3-5 minutes until translucent. Add the chicken pieces, season with salt and pepper, and cook for another 5-7 minutes until browned on all sides.

Add the carrots and potatoes to the pot, stir, then pour in the water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the vegetables are tender.
