Prepare your ingredients: peel and thinly slice the garlic, finely chop the chili (including seeds if you prefer more heat), and roughly chop the parsley. Thaw the cocktail shrimp if frozen and pat them dry. You can halve the cherry tomatoes.

Cook Pasta

In a large pot, bring salted water to a boil. Add the black spaghetti and cook according to package directions until al dente (about 8-10 minutes). Before draining, reserve about 1/2 cup (120 ml) of the pasta cooking water.

While the pasta cooks, heat 2 tbsp of olive oil in a large skillet over medium heat. Add the sliced garlic and chopped chili, sauté for 1-2 minutes until fragrant but not browned. Add the cocktail shrimp and halved cherry tomatoes, and cook for another 2-3 minutes until the shrimp turn pink. Pour in the dry white wine and let the alcohol evaporate (about 1-2 minutes).

Combine & Serve

Drain the pasta and add it directly to the shrimp sauce in the skillet. Toss everything together thoroughly. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency. Finally, stir in half of the fresh chopped parsley and season with salt and freshly ground black pepper. Serve immediately, garnished with the remaining parsley.
