Heat the oil in a large pot over medium heat. Add the chopped red onion and sauté until translucent, about 5-7 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

Sautéing Mushrooms

Add the sliced mushrooms to the onion base. Sauté them over higher heat until they release their liquid, then the liquid evaporates, and the mushrooms are lightly browned, about 8-10 minutes. Season with salt and pepper to taste, and sprinkle with ground caraway seeds.
