Clean the chicken liver: remove any membranes and fatty parts. If necessary, cut into smaller pieces. Peel and finely chop the red onion, and crush or mince the garlic.
Sautéing Onion
Heat the oil or lard in a large pan over medium heat. Add the finely chopped red onion and sauté until translucent, about 5-7 minutes. Be careful not to burn it.
Frying Liver
Add the cleaned chicken liver to the pan and fry over higher heat, stirring constantly, until all sides are nicely browned and turn white, which takes about 5-8 minutes. Then add the crushed garlic and pepper, and mix well.
Seasoning and Finishing
Remove the pan from the heat, sprinkle with sweet paprika powder, and quickly stir to prevent the paprika from burning. Pour in a little water (about 50 ml), then return to the heat and simmer covered for another 5-7 minutes until the liver is completely tender. Finally, remove the lid and salt to taste. Stir and serve immediately!
Extra Tips
► Do not salt the liver at the beginning of cooking, as it can harden! Add salt only at the very end.
► If you like spicy flavors, you can add a pinch of chili alongside the paprika.
► Fresh parsley or marjoram pairs wonderfully with fried liver; sprinkle it on before serving.
