On a floured surface, roll out the dough to about 1.5-2 cm (0.6-0.8 inches) thick. Fold one-third of the dough towards the center, then fold the other third over it. Turn the dough 90 degrees and repeat the folding. Repeat this process two more times, resting the dough in the refrigerator for 20-30 minutes between each fold. This step creates the layered structure of the scone.
