Prepare Strawberries
Wash and hull the strawberries, then blend them into a smooth puree using an immersion blender or a regular blender. If desired, you can pass the puree through a sieve to remove seeds, but this is optional.
Gelatin and Cream
Soak the gelatin sheets in cold water for 5-10 minutes until softened. Meanwhile, whip the heavy cream in a bowl until stiff peaks form, then set aside in the refrigerator.
Combine Ingredients
In a large bowl, combine the Greek yogurt with the strawberry puree and powdered sugar. Taste and add more powdered sugar if needed. Squeeze out the excess water from the softened gelatin sheets, then melt them in a small saucepan over low heat, stirring constantly (do not boil!). Stir in 2-3 tablespoons of the yogurt-strawberry mixture, then pour the gelatin mixture into the remaining yogurt-strawberry mixture and mix thoroughly.
Fold in Cream
Gently fold the whipped cream into the strawberry-yogurt mixture in several batches to keep the mousse airy. Be careful not to deflate the cream.
Chill and Serve
Divide the mousse among 4 glasses or dessert bowls, then refrigerate for at least 3 hours, or preferably overnight. Garnish with fresh strawberries before serving.
