Add the calamari rings to the soup and cook for 5 minutes. Then add the fish fillets and shrimp, cooking for another 5-7 minutes until the fish is cooked through and the shrimp turn pink. Finally, add the cleaned mussels and cook, covered, for 3-5 minutes until the mussels open. Discard any unopened mussels.

Taste the soup and adjust seasoning if necessary. Stir in half of the freshly chopped parsley. Ladle the hot soup into deep bowls, sprinkle with the remaining parsley, and serve immediately with toasted, garlic-rubbed crusty bread.
